Here's what we had for dinner:
Southwestern Chicken Soup & Salad
It was easy, quick and very tasty. Soup is not Ethan's favorite, but he went for seconds on this one :D
The following is the recipe! Let me know what you think if you do try it. Enjoy.
Ingredients:
- 1 12-ounce jar salsa verde
- 3 cups cooked chicken pieces (1 small deli-counter rotisserie chicken or leftovers)
- 1 15-ounce can cannellini beans, drained
- 3 cups chicken broth
- 1 teaspoon ground cumin (optional)
- 2 green onions, chopped (for topping)
- sour cream (topping)
- tortilla chips (optional)
Directions:
- Empty the salsa into a large saucepan and cook for 2 minutes over medium-high heat.
- Then add the chicken, beans, broth, and cumin (if desired).
- Bring to a boil, lower heat to a simmer and cook for 10 minutes, stirring occasionally.
- Top each bowel with green onions, sour cream and tortilla chips.
**For a soupier dish, use 4 cups of broth.**
I made home-made corn tortilla chips! It was so good with the soup and the salad. The salad was also very easy to make and it does not ask for too many ingredients. Ethan made this salad once and it has become our favorite one. He learned it from when he was serving his mission in Brazil.
The Simple Salad Recipe:
-Ingredients:
- Lettuce
- Tomato
- Red or Yellow Onion
- Salt
- Lemon
Just cut up the veggies and onion. Sprinkle with salt and add lemon. Toss and it is ready to eat! See how simple this is?! It is so good I can eat this salad everyday!
